Honestly, that was a better ending than I expected. For me, in terms of satisfying resolutions of shonen ships they rank up there with Ed and Winry, Kaneki and Touka, Medaka and Zenkichi.

Which was, that we had too many food battles and not enough character interaction and growth. There needs to be down time in a series, to let relationships evolve.
And there was rarely any comfy, slice-of-life chapters in the series. But Tsukuda, for whatever reason, just found it hard to do that. And the sad thing is, it would have been so easy. The characters are in an environment that makes it more convenient than most series to evolve relationships.
He had all the opportunities to do so, and he handled them all badly. And honestly, even saying all that, he still could have made them married in the end if he had wanted to.
He gave us a significant timeskip where anything could have happened during it. He just failed to fully deliver on his initial premise is what it came down to. It had so much potential, but he squandered most of it in the end. So Tsukuda did some romantic progress by making Soma realized his feeling and made an oath to Erina in his heart using inner monologue instead of verbally.
Hayama is the only character who got married. The fanbook showed that the characters who are confirmed having love interests are Soma, Erina, Shinomiya, Mizuhara, Hayama and Hinako. Tsukuda received a lot of letters from the readers asking who Soma would end up with. So the author decided to add Asahi into the story to make Soma realize his feeling to Erina.
